Nadia thanks her parents for teaching her that work is not a tool but a value in life and how extraordinarily challenging but exciting it is to get up early in the morning, turn on the ovens, organise the ingredients, supervise the cooking of the cuts of meat and be transported by the aroma of butter… bay leaf…nutmeg and finally taste the braised “cornerstones” of the filling of the “Love Knots”, the famous tortellini of Valeggio: jewel caskets of taste draped in a pasta cloak as thin as silk.

A sense of absolute calm fills the mind, not the presage of exaltation over a successful dish but the realisation of a dream, the contentment felt at the end of a gastronomic marathon, not a triumph or a winner’s podium, just the satisfaction that concentration, training and effort have been rewarded!
